Spicy spreadalicious (nduja style)

Finally this dried chili forward, soft, super spicy, calabrian style salumi is ready. Although its influenced mostly by nduja (a calabrian traditional peasant style salumi) I can't call it that. It's a hybrid. In place of calabrian chili's I use new Mexican and Mexican.I have a need to support my native state.it needs it. Cased in large format natural casings( 44-5". In diameter) each piece weighs about 18 oz. After 10 wks of waiting to cut into this goody I'm pleasantly suprised. Pics to come
